Our menu doesn't change weekly or follow trends. These are the items we've refined over seven years. Each one exists because we know how to make it properly.
Classic Sourdough Loaf
Our foundational bread. 72-hour cold fermentation, baked in a stone hearth oven. The crust crackles when you break it; the interior stays moist for five days. Made with organic wheat, rye starter, sea salt. Nothing else.
Weight: approximately 850g. Best used within 5 days, though it makes excellent toast even after a week.

Butter Croissants (Set of 4)
Laminated dough with 27 folds, made the night before. Butter content is 42%, which is higher than most commercial versions but necessary for proper flake. Best eaten within 6 hours of baking. We make 40 each morning; when they're gone, they're gone.
Each croissant weighs about 75g. Recommend morning pickup for optimal freshness.

Danish Rye Bread (Rugbrød)
Dense, dark, rich. Made with cracked rye berries, sunflower seeds, and sourdough culture. This is the bread Denmark was built on. Slices thin, stays fresh for a week, pairs with everything from cheese to liver pâté. One loaf lasts a family of four about three days.
Traditional recipe, 18-hour fermentation. Weight: approximately 1kg.

Cardamom Buns (Kardemommeboller) - 6 pieces
Soft, enriched dough scented with freshly ground cardamom. Shaped by hand, topped with pearl sugar. These are what Danes reach for with their afternoon coffee. We make them slightly less sweet than the commercial versions because cardamom's flavor shouldn't be drowned.
Best enjoyed same-day. Can be frozen and reheated.

Seeded Multigrain Loaf
When you need something hearty. Sunflower, flax, sesame, pumpkin seeds throughout. Whole wheat and rye flour base. Higher protein than our sourdough, stays filling longer. Good for active mornings when you won't eat again for hours.
Weight: approximately 900g. High fiber content, excellent for toast.

Weekend Pastry Selection (Box of 8)
A rotating selection based on what's seasonal. Might include: cinnamon swirls, custard-filled danishes, almond pastries, fruit tarts. We choose what goes in the box based on what came out best that morning. If you have allergies, order something specific instead.

How Pricing Works
Our prices reflect actual costs: organic flour, quality butter, labor time, and the reality that some items take two days to make. We're not the cheapest bakery in Copenhagen. We're also not trying to be.
A commercial sourdough loaf costs about 35 kr. and uses fast-rise yeast, stabilizers, and dough conditioners to speed production. Ours costs 67 kr. because it takes three days and uses only four ingredients.
You're paying for time, technique, and ingredients that don't cut corners. If that doesn't make sense for your budget, we understand. But we're not lowering quality to hit a lower price point.
Availability Notes
We bake fresh every morning. Most items are available from 7am until we sell out, typically by early afternoon. Croissants and laminated pastries sell fastest—usually gone by 10am on weekends.
If you need something specific, call ahead or place an order through our form. We can set items aside for pickup later in the day, but we can't guarantee same-day availability without advance notice.
